Hi Kelsey, I probably picked the worst time to make these cookies! After cutting down trees all day with a bow saw, I came in and decided I'd make the chickpea cookies once and for all. We don't have a food processor so mashing the chickpeas was an extreme effort (I had no forearm power left after sawing and hauling trees). Anyway, I LOVE the flavour profile. We had two dairy-free chocolate bars from our recent British Airways flight so I smashed those in as well. Next time I'll add semi-sweet coconut too. Thanks for this recipe! Simple and the marriage of such great power foods!
Now I have to try this one. Lots of protein and if I'm right easy to take with me when I'm out for a longer walk. Euh, how much is 1 can of chickpeas? Where I live we have 2 sizes of cans.
Thank you. I made a batch. They might have been a bit too big and therefore they might have been a bit too crisp on the outside and still a bit too wet on the inside. No matter. They were yummy and with a few adjustment will probably become a good go to for when I'm out and about.
Ah, mine where more rock shaped and 3-4 bites big. Like I said they were yummy. They just need a little bit of tweaking. Nothing wrong with the recipe. Just me having to explore it a bit more.
Hi Klamo, I made 2-bite sized cookies and found them wet on the inside too. I may flatten them next time vs. the spoon drop style. I was also thinking that coconut would be a great addition.
It amazes me the things I learn about baking that isn't traditional baking. Like black bean brownies, for instance.
These cookies remind me of a Facebook recipe I saw (and made) for peanut butter eggs. Super simple, no bake, sweet and delicious with just 4 ingredients.

I made them without a food processor, Kristi! I too love those recipes where the 'thing' is something else unimaginable. Like beetroot brownies or avocado-based pudding. Or, cookies made out of cake mix. Or--better yet---that viral recipe for three ingredient bagels (yogurt, self-rising flour and an egg for a wash).
Ooooooh you just reminded me of an incredible recipe I used to make for chocolate mousse made out of avocado. It was literally THE most decadently rich chocolate mouse ever!!!

These non-sugar treats are just peanut butter, maple syrup, coconut flour and then dipped in semi-sweet chocolate. Delish!
